This Wusthof Sharpening Steel will keep all your Wusthof knives razor sharp. This sophisticated sharpening steel is part of the Wusthof Ikon range, the jewels of the Wusthof collection. The dark brown hues with distinctive wood grain markings make every piece unique. This sharpening steel is not dishwasher safe, wash by hand only.
This Wusthof sharpening steel measures 26cm and its handle is made from Grenadill wood (African Blackwood) which is one the hardest types of wood in the world. All farming is limited to a small quantity and is government controlled to maintain the finest quality and remain environmentally friendly.
With regular use, any knife will lose its 'bite'. Every edge has many very fine 'teeth' which are bent to both sides of the blade after a certain time of cutting on a hard surface (you can´t see that with your eyes- only under a microscope). Using this Wusthof sharpening steel will realign these teeth and keep the edge sharp for a long time of cooking enjoyment.
To use, hold the steel with one hand and the knife with the other, and guide the blade with light pressure across the steel in an arching motion, at a 20 degree angle to the steel. Repeat 6 - 8 times. Never stroke each side more than once in succession. You should always use a honing steel that is longer than your largest knife.
